This was probably the easiest meal I’ve prepared since going paleo! The best part was how delicious it was! We love avocado…probably eat too much of it, but it’s so wonderful!

Spinach Bacon and Avocado Burger
2 Turkey Burger Patties
4 Slices Bacon (uncured)
6 oz Spinach
1 Avocado
Onion Powder
Garlic Powder
Salt
Pepper

Grill burger. Dice bacon. Heat pan on stove top and brown the bacon. Once crispy, remove bacon, leaving the grease in the pan. Add spinach to remaining bacon grease and add seasonings to taste. Once spinach is wilted, add bacon back in. Use spinach/bacon as a base for grilled burger and top with avocado.

*I didn’t follow this one exactly. I made my own guacamole for the burger topping and didn’t cook the spinach leaves. I wish I had, though. They were good, but I can only imagine that cooking them in that bacon grease made them even better!

Guacamole

1 avocado, mashed

1 tomato, diced

garlic powder

onion powder

handful of fresh cilantro, chopped (I’ve also used dried)

lime juice

sea salt

fresh ground black pepper

Mix the mashed avocado, cilantro, and avocado together. Sprinkle with garlic powder, onion powder, sea salt, and black pepper. Squirt some lime juice on. Stir and enjoy!

Fresh Tomato and Avocado Salad

1 tomato or cherry tomatoes

1 avocado

olive oil

balsamic vinegar

sea salt

pepper

Dice the tomato.  Slice the avocado. Combine. Drizzle them with olive oil and balsamic vinegar. Season with salt and pepper.

Zucchini

I just sliced up some zucchini and sauteed it in coconut oil with sea salt, garlic powder, and black pepper.

After our 9 am CrossFit workout this morning, Brett and I went to the Farmer’s Market. It was only Brett’s second trip there EVER…which also means it was likely my second trip in the almost five years we’ve been married. We’ve decided to make this a regular weekend event for us! I love the idea of buying healthier, organic food choices…and we LOVE supporting locals! Today we purchased sweet potatoes, okra, collard greens (for Brett), tomatoes, honey mustard, bacon, and roast! Our personal favorite will likely become J & J Farm‘s meat! I’ve heard lots of great things about it and am so excited to prepare our roast and bacon this week! We also pre-ordered two whole chickens… I have never prepared whole chickens, so that will be an experience in itself! There weren’t just a ton of people set up there…maybe it’s too early in the year! I am looking forward to some fresh seafood (Mobile, AL) being there sometime, too!
